Rocky Road, Tiffin, Fridge Cake - call it what you will, everyone makes their own version, which is one of the reasons it's such an awesome treat to make at home. You can add in whatever you like, and take out the things you don't. The key, I think, is balance - getting the optimum level of sweetness, crunch and soft chewiness makes for a perfect rocky road. Want to know our secret for the softest chocolate? Don't use golden syrup - we use Coconut Blossom Syrup, it has a lot more flavour, and adds a slight taste of malt....

Berry cheesecake crumble bars

With this season's blackberries turning ripe right now, it's a great time to get making something delicious. We all love an apple and blackberry crumble, but If you fancy making something different then this is a great recipe to try.You can cut it up into small portions, wrap it baking parchment, and hand some out to friends when you turn up at their house for socially distant barbecues. Kaffir Lime Baked Rice

This is such an easy way to pimp up your rice side dish. Don't be put off by the need to buy kaffir lime leaves - they're readily available in supermarkets, either dried or fresh. The fresh leaves can be kept in the freezer if you wrap them in aluminium foil. If you can find some, glutinous rice is best for this, but at the time of writing, we're still in covid-19 lockdown, and we couldn't find any, so we made it with thai rice, and it was still delicious - basmati or long grain rice will also work. 1...

Thai Green Curry

Oh how we love Thai food. When we were still in the planning stage for the cafe, we'd hoped to be able to offer supper clubs, and we knew we'd want at least one Thai evening. We soon realised that running supper clubs ourselves was never going to work - not with two young children. So these supper clubs never did happen.
